Also, the fighters move in a fairly predictable pattern, too, so once you figure that out, you can anticipate where they're heading. When you know one of them is going to be in a specific spot in a matter of seconds, start "spamming" that area. When the fighter shows up, he'll be toast.
And yeah, again as Tempest said, the real key is to lead your shots a little. You need to hit where they're going to be, not where they're at.

Also, I think there's a mod to make it easier (and for swoop racing).

I have to admit, I'm very surprised this game requires some hand-eye coordination... most RPGs aren't like that.
