I have just gotten everything to work, BG-BGT-NEJ
However, I am encountering a large amount of wolves, and I am still level 1. I have seen Dread and Dire wolves in the very first area after Candlekeep, and Vampiric Wolves in the area around Church of Lathander.
Does this have anything to do with the difficulty level, or is it bugs? In the last area (Lathander Church), 2 vamp, 2 dread and 4 normal wolves showed up in a pack, and I am level 1... I have set difficulty in the middle (BG1 style).

The Vampiric- and Dreadwolves are from the original BG1-game. So no change there. Just avoid them, while you are level one.
On the other Hand in BP-BGT you encounter relativ though enemies in the game.
Also things like Ankeghs for third level Parties.

Really? I don't seem to remember them being there so soon..
I always saw a black bear, maybe a normal wolf when I played back in the day in these areas, but maybe I am just unlucky :-(

Difficulty level does play into this but most areas are set to just a few creatures (lowest difficulty setting) to more for all other settings. Only a few areas are scripted to really pile on the creatures with harder difficulty settings. The wolves are correct for the Temple area. The area outside of CandleKeep should just have regular wolves and maybe a dire wolf as a spawn. There are some harder creatures if you install DSotSC but at this point in the game, they should just be kobolds.
