Sadly, this may be my last time playing BG2 as I have a whole crate full of unplayed games (including IWD and, believe it or not, Planescape.) The components I'm most interested in are the multiple stronghold and romance ones so I get to try everything and everyone this last time. Am I out of luck?

the only parts of Ease of Use that work but aren't on that list are the four (or is it five?) romance fixes. i can't remember, now, why they're not listed as compatible, but there was probably a reason once. however, they are actually compatible. other than that: do what SirBB says; stick with what's listed.
Would those four(or five) be:
Component 22: Romance: Bug Fixes
Component 23: Romance: Ignore Race/Gender
Component 24: Romance: Multiple NPCs Concurrently
Component 25: Romance: Multiple NPCs Concurrently, Say Anything ?

yep, the fifth being the Imoen TOB dialogue fix, which i can never remember if its required for the romances or not, but i always install it.
