You see, the Edwin overwrites Edwin's script with its own, which means that the changes to Edwin's script introduced by any other mod will be overwritten, too. For this reason, it's best to install the Edwin Romance as early as possible in the installation.
You might also want to consider using G3's BG2 Tweaks instead of Ease of Use. It's still actively supported, and it includes everything in the Ease of Use, and more besides, with everything available as a separate component for maximum customization.

FORBID_COMPONENT ~setup-ease.tp2~ ~20~ @31
Please post your weidu.log, just so I can see if you really did uninstall Ease of Use, or if some strange process reinstalled it again. If you really and truly have uninstalled Ease of Use "Female Edwina," there's no reason for this to be coming back as true. So just to be safe, post the log. It's a file in your BG2 directory that can be opened with any text editor, like Notepad. You can just post the contents in this thread, if you like.
It's possible that you could just comment out the FORBID_COMPONENT line of the Edwin Romance tp2 (and *only* the FORBID_COMPONENT line of the tp2). After I've seen your weidu.log, I'll tell you how to do that.
I've also downloaded and checked Weimer's Ease of Use. It changes the portrait and also replaces two spells. That's the problem with older mods: they overwrite, rather than patch. But Edwin does it, too.
While you're checking your weidu.log, I'll be looking at the Edwin Romance to see if it overwrites the same two spells. If so, there are no problems. You could just comment out the lines and carry on.

After checking the Edwin Romance, I see that it overwrites the same two spells, so it doesn't really make a darned bit of difference if you've got Ease of Use installed first, since the Edwin Romance will overwrite the changes introduced by it anyway.
So, just go ahead and comment out the line. If you don't know how to do this, I'll tell you how now.
- Open up your BGII - SoA directory, and find a file titled Setup-EdwinRomance.tp2.
- Open Setup-EdwinRomance.tp2 with any text editor, like Notepad.
- Find the line that says
FORBID_COMPONENT ~setup-ease.tp2~ ~20~ @31 - Make it look like this:
//FORBID_COMPONENT ~setup-ease.tp2~ ~20~ @31 - Save your changes
- Go ahead and install as usual.
