It had to be Death. No-one else went around with empty eye sockets and, of course, the scythe over one shoulder was another clue.

Liches don`t necessarily equal with crazy people. Minds of liches, unlike minds of vampires, withstand time without problems. Vampires often have their psychologies deteriorated over time, liches remain sane if they were sane in their previous lives. They remain motivated with their own goals for centuries and millennia, thus being able to start researching things which are far beyond any mortal`s comprehension.Maybe hes some sort of good lich, an undead wizard that hasnt gone crazy.

True. The easiest examples are the Arch-Liches, who tend to be good or neutral. Or another example could be the Lich that guards the Nether Scroll in the lower tombs.There are good-aligned liches throughout the Realms, indeed
But Elminster is not a Lich, nor has he any connection to undeath.

Elminster can time-travel, part of his Chosen ability. That would be probably why he's over 1000 years old and as a Chosen, his normal lifespan has been magically enhanced. Ok, that's as far as I know. I haven't read the entire Elminster saga yet.
