It's a really Big World Out There

I have been playing Baldur's Gate since its original release. I have played various mods (items, class, npcs, total conversions, etc). On more forums than I care to count there are lists of recommended mods and the order. All of which seem to contradict one another. I have over 6 GB of files.
What I want to do is play the games from BG1 to TOB. I want to use as many mods as I can with maximum playability. I have now completed an install of BG1, ToSC, BG2:SoA and BG2:ToB. I have applied the patches (btw, is the beta patch for ToB recommended?). I have added nothing else. What are the suggestions? (NOTE: If version numbers are important, please state them.)
